Overview

This seminar brings together healthcare providers, community leaders, and policy stakeholders for a comprehensive exploration of Food as Medicine (FIM) with specific application to rural and tribal Oklahoma.

This full-day conference addresses the intersection of food access, chronic disease burden, and workforce challenges through both upstream prevention ("Food AS Medicine") and targeted clinical interventions ("Food IS Medicine"). Participants will gain evidence-based knowledge of nutrition's role in physical, mental, and spiritual wellbeing through an osteopathic lens, learn practical strategies for integrating food-focused conversations into patient care, and explore proven intervention models including medically tailored meals, produce prescriptions, and community-based programs. The conference features expert presentations, panel discussions with local program leaders, and interactive breakout sessions focused on implementation in diverse Oklahoma communities.

Special emphasis will be placed on culturally grounded approaches, tribal health initiatives, and policy developments shaping Oklahoma's FIM landscape, including recent Medicaid waiver opportunities and SNAP program innovations. Attendees will leave with actionable tools, resources, and partnerships to advance food as medicine efforts in their practice settings and communities.


Objectives
At the conclusion of this activity, learners will be able to:

  1. Participants will analyze the relationship between ultra-processed foods, nutrient density, and chronic disease pathogenesis by comparing dietary patterns and their impacts on the body's ability to self-regulate and self-heal, incorporating evidence from recent cardiovascular and metabolic research to inform patient counseling strategies.
  2. Participants will apply validated dietary screening tools and motivational interviewing techniques to conduct nutrition-focused patient histories that identify food insecurity status, assess readiness for change, and elicit personal values that can inspire "change talk" in clinical encounters.
  3. Participants will evaluate the appropriateness of specific Food IS Medicine intervention models (medically tailored meals, produce prescriptions, medically tailored groceries) for diverse patient populations and disease states by assessing evidence for effectiveness, considering dose and duration requirements, and determining suitability based on individual patient circumstances and available community resources.
  4. Participants will create collaborative implementation strategies for delivering culturally grounded Food as Medicine interventions in their practice settings by synthesizing knowledge of osteopathic principles, tribal food sovereignty, rural access barriers, available Oklahoma resources, and cross-sector partnerships to design context-appropriate workflows that integrate healthcare providers, community health workers, food banks, and tribal health programs.
  5. Participants will explain the core elements and evidence base for each of the three primary FIM intervention models (medically tailored meals, medically tailored groceries, and produce prescriptions), including suitable populations, intervention duration, expected outcomes, and the role of these interventions in reducing hospitalizations and healthcare costs.
